Headrick Greasy Cut-Short is a rare heirloom pole bean (Phaseolus vulgaris), a type of greasy cut-short bean treasured in Appalachian cuisine, especially in southeastern Kentucky.

Tony Headrick discovered seeds in the floor cracks of an abandoned home in Harlan County, Kentucky. These seeds were preserved and shared through heirloom networks, making this variety a standout among greasy cut-shorts.

Key Characteristics

Greasy beans feature smooth, shiny pods without the fuzzy "peach fuzz" of common green beans — they look slick or "greasy" (but aren't oily).

Cut-short refers to seeds packed so tightly in the pod that they develop squared-off, blunt ends → resulting in meaty, seed-filled pods.

This variety combines both traits — offering tender, slick hulls and densely packed seeds for a rich, hearty texture and flavor.

It produces a pole (climbing) bean with vines that grow 6-8 feet or more, requiring a trellis or support. Pods measure 4-5 inches long, green and shiny, with bicolored or brown-speckled seeds. The beans are highly productive, continuing to yield until frost, and praised as very meaty and flavorful.
