White Scalloped Pattypan Squash (aka. Early White Bush Scallop), is a charming heirloom variety of summer squash (Cucurbita pepo) with a distinctive flying saucer-like shape—flat, round, and featuring deeply scalloped edges.
This ancient Native American heirloom dates back hundreds of years (with European depictions from as early as 1591) and remains popular for its productivity, mild buttery flavor, and tender texture when harvested young.
The fruits start pale green and turn creamy white as they mature, typically harvested at 2–4 inches in diameter for the best tenderness (skin edible and soft). Larger ones (up to 7 inches) can become tougher but are still usable for stuffing or grilling.
It's a bush-type plant (compact, no vines), making it ideal for small gardens or containers. Highly productive, heat-tolerant, and great for sautéing, roasting, baking, frying, or stuffing.
